Processing: Washed, Natural and Honey

Once the coffee berry has been picked, the seed (coffee bean) must be removed from the pulp. This can be done in three different ways (there are several ways, but these are the most commonly used):

  • Washed: The pulp is removed with water, giving a clean and clear taste.
  • Natural: The berries are dried with the pulp on. This starts a fermentation that gives more fruity and vinous flavor notes.
  • Honey: A middle ground. Some pulp is preserved during drying, giving a balanced profile with both sweetness and complexity.

The choice of processing method has a great influence on the final taste.

After processing, the coffee must be roasted. This is where the roaster can make its mark.

  • Light roast: Highlights the origin and acidity of the beans. You typically get more fruit and florality.
  • Medium roast: Balances acidity and sweetness. A popular choice for both filter coffee and espresso.
  • Dark roast: More bitterness and heavy chocolate notes. Good for milk-based drinks – but can mask the original character of the beans.

If a bean is of high quality, it is often roasted lightly. If the quality is lower, a darker roast is chosen to hide imperfections and create a more "classic" coffee flavor.
